Perfect Diet Food – Blueberry and Double Chocolate Muffins

Ok, not really. But very yummy anyway.

These are my go-to muffins. I make them with whatever fruit I have in the fridge, apple, pear, strawberry or whatever. OK, not oranges, but that might be an interesting experiment / disaster for a rainy day.

It mixes up really quickly. I don’t get why people buy packet stuff when this is so quick.

Yes, it made more than these, but this is what is left after the first hour.

Chocolate Blueberry Muffins

– adapted from The Essential Vegetarian Cookbook by



3 cups plain flour, sifted

1 Tblsp baking powder,

3/4 cup soft brown sugar,

250g butter,

1 cup milk

2 eggs, lightly beaten,

1 cup blueberries,

1 cup dark chocolate pieces.


Preheat oven to 210c. Fill a 12 cup cupcake tin or a 6 cup muffin tin with cases.

Sift flour and baking powder into a large mixing bowl. Mix in the brown sugar, make a well in centre.

Melt butter in a small saucepan, add milk then the eggs and add to the flour mixture. Mix lightly – do not overmix. Add the blueberries and chocolate and just mix through.

Spoon into the muffin/cupcake cases and bake in oven for 20 minutes or until cooked.

The recipe says to dust with icing sugar, but frankly, I find the sugar reaches critical levels at this point, so don’t bother!

    How are these double chocolate? they look more like blueberry-choc chunk to me…

      Yes, you’re right. I forgot I didn’t take photos of the ones with cocoa powder in the flour as well as choc chunks.
