A Brief Moment of Sunshine

McScrooge was out west last weekend, and the kidlets and I treated it a bit like being on holidays. Which is a bit mean, isn’t it? I mean, in fact it was extra work, but theres something about not having to fight someone for the remote or defend my program choices to – although in fact what happened was that Girl claimed the remote and I didn’t get to watch what I wanted anyway…

And it was a fricking beautiful weekend. It was sunny and warm without being boiling. We went to the markets, and had a ride on the ferry, and then on Sunday we made savoury carrot and broccoli muffins and scones with jam and cream. Girl built a big cubbyhouse in the backyard with sheets and stuff and Boy got in her way and pulled it all down and then we pigged out. And it was glorious. McScrooge needs to go west more often. Either that or we just need to get out more…

Boy is looking more and more like his Daddy. I think it’s the little milk-bellie that does it. On his Dad it’s more a beer-bellie though.

Mmmm, scones with jam and cream….except at the last moment we realised we had run out of jam, and instead its scones with cranberry sauce and cream….yum….well really its practically exactly the same. So still yum.

The Sick Room and Other Stories

It has been rivers and rivers of gross oozing green snot and coughs all over the place over here. Girl had a few days off school (coinciding with a report that she hadn’t finished which was due…hmmm) and Boy had a week off of Playgroup. I chucked a few mattresses on the floor of the livingroom and they built themselves a nest of nanna-rugs, pillows and snotty tissues and zombied the days away.

There is still a fair amount of snot hanging around, but they are finally mostly over it, and on the weekend we went down and spent the day with the Dreamer! That Oof is such a sweetie, he honestly is so happy and trusting. The Boy by comparison watched any and everyone suspiciously right up until we were leaving when he condescended to cuddle Oof. The Dreamer rustled up some delicious burritos with an avocado salad, and apple crumble with ice cream. It was really lovely to hang out and hopefully we’ll do it again soon.

In other news, HELLO my newest nephew, Jimmy Ray Jeep Wrangler! Can’t wait to see you! Big smooches from your aunties! xxxxooooo!!!

Oh! And just to make everyone jealous – I’m making potato scrolls for dinner! Mmmmmm! Heh heh eheh!

 

The Best Salad EVER

This is the best salad recipe ever invented by man – or woman. Shut up if you don’t agree. I don’t care. And its super easy and quick, too.

Tomato and Bocconcini Salad

stolen almost complete from Vegetarian for Honeymooners

(and yes, I know I don’t qualify, but SO??)

Ingredients

4 Tblsp ex virgin olive oil,

2 Tblsp balsamic vinegar,

salt and freshly cracked black pepper to taste,

4 ripe tomatos diced,

12 bocconcini cheeses, sliced in half,

2 large handfulls of rocket (arugula),

handful of fresh basil leaves, roughly sliced

Method

Pour the olive oil into a medium salad bowl, add the vinegar, salt and pepper. Add all other ingredients and toss through to coat. Let it sit for about five minutes and serve! Sooooo yummy!

I have had this on the side fancy style with lasagne but its just as wonderful with warm crusty baguettes or even with smashed potatoes for dinner. Its super quick and easy, but far yummier than beans on toast.

Perfect Diet Food – Blueberry and Double Chocolate Muffins

Ok, not really. But very yummy anyway.

These are my go-to muffins. I make them with whatever fruit I have in the fridge, apple, pear, strawberry or whatever. OK, not oranges, but that might be an interesting experiment / disaster for a rainy day.

It mixes up really quickly. I don’t get why people buy packet stuff when this is so quick.

Yes, it made more than these, but this is what is left after the first hour.

Chocolate Blueberry Muffins

– adapted from The Essential Vegetarian Cookbook by

 

Ingredients

3 cups plain flour, sifted

1 Tblsp baking powder,

3/4 cup soft brown sugar,

250g butter,

1 cup milk

2 eggs, lightly beaten,

1 cup blueberries,

1 cup dark chocolate pieces.

Method

Preheat oven to 210c. Fill a 12 cup cupcake tin or a 6 cup muffin tin with cases.

Sift flour and baking powder into a large mixing bowl. Mix in the brown sugar, make a well in centre.

Melt butter in a small saucepan, add milk then the eggs and add to the flour mixture. Mix lightly – do not overmix. Add the blueberries and chocolate and just mix through.

Spoon into the muffin/cupcake cases and bake in oven for 20 minutes or until cooked.

The recipe says to dust with icing sugar, but frankly, I find the sugar reaches critical levels at this point, so don’t bother!

A Little Bit of Random

I made scones with jam and cream the other day for Girl when she came home from school. Yumm.

Girl has hers like a sandwich which squirts out all over her face when she bites into them.

But I reckon that scones are basically a vehicle to eat cream and jam, and I break open my scones and heap up each half.

We ate till we were way too full, and we even left some for Daddy…some….

Then Girl pushed Boy in his swing on the verandah. He loves it, all you can hear are squeals and laughter. And screams when you try to get him out.

Then, the next day (in a completely unrelated event) Girl lost another tooth. Daddy thinks its classic Bogan style.
